And We Use Local Produce
The second annual Squash-Off will take place today at the University Center Atrium. This is in continuity of the organizers mission to 'get the word out about local food and to let students know that there is a group on campus working to promote local, sustainable farming' as mentioned by the organizers. Dan Spencer of Clark Fork Organics said that this event also supports local agriculture and farming. With these efforts, they are eyeing that the local economy in Montana will pick up because of transportation costs and fuel consumptions.
Last year's launch proved to be a success. In can be remembered that in 2008, activities included not only mouth-watering dishes but also superb entertainment, courtesy of PEAS Farm Team. Last year's highlight was the judging portion. Everyone had to wait and see what happens while they were being serenaded by strumming and heartfelt lyrics. Hannah Van Arsdell vividly remembers the scene and quips that she's ready to take the boys from OEAS Farm down this time.
Three teams will be competing and they are composed of chefs from PEAS Farm, UM Climate Action Now! and Harvest Hoes. These teams are expected to battle with their spoons and forks to deliver great-tasting delicacies with squash as their main ingredient. Among the dishes to watch out is mascarpone, which, as Van Arsdell shares, is ravioli with squash and sweet cheese. Teams will also prepare squash soup, squash pasta, squash pie, and pumpkin crème brulee among many others. These teams are expected to battle their hearts out via the art of cooking.
There are five judges to taste who will decide which among the squash delicacies will be named winner. The jury is composed of environmental studies grad student Heather McKee, Biga Pizza Bob Marshall owner, Osmara Sosa from UM Catering Services and Clark Fork Organics' professor Dan Spencer and Kim Murchison. Missoula mayor John Engen will also grace the occasion and introduce the event.
The day will cook with music and interviews with the judges, magic tricks to be performed by G. Wiz and at noon, the main event will take place. The cooking show is inspired by the show Iron Chef. During this event, there will also be a donation jar that will be passed around. The proceeds will go to animal purchase from Heifer International. The purchased livestock will be given to families living in third world countries. Also, expect freebies like recipes and sumptuous cookies while enjoying the show.
